Oven tapenade baguette: Spread 1 tablespoon of tepanade on toasted bread baguette slices. Top with Mozzarella cheese, bake for 3 to 5 minutes until cheese is melted.
Tapenade on crostinini toast: Spread tapenade on crostini toast with a thin layer of goat cheese.
Basil pesto dip: Blend basil pesto with 1 cup cottage cheese, 1 cup light sour cream & 1/2 cup grated parmesan cheese in a food processor. Serve with small bread sticks or vegetables.
Artichoke pesto with pasta: Add artichoke hearts to artichoke pesto & toss with penne.
Quick tasty gravy: add a few drops of balsamic vinegar to a frying pan after cooking steaks, chops, sausages or chicken
Exotic green salad: add 2 tablespoons of vinegar, 2 tablespoons of olive oil, salt and pepper and mix well
Grilled vegetable side dish: prepare 1 carrot, 2 zucchini, 2 tomatoes, 1 green pepper, 1 red pepper & 1 onion all sliced & place in a baking pan. For the sauce: mix 1 tsp. each of chopped parsley, oregano, dried mint, crushed garlic & 1 tbsp. each of vinegar & olive oil, salt & pepper then pour over the mixed vegetables. Heat oven to 200 C & place pan for 30-35 minutes until vegetables are done
Sandwich spread and vinegar dip: mix 1tsp. of your favorite vinegar & 4 tbsp. of mayonnaise. Serve along crackers, bread or celery sticks.
Low-calorie white salad dressing: mix 1 cup of cottage cheese, ¼ cup of skimmed milk and 1 tsp of your favorite vinegar.
Delicious pickles: slice the desired fruit or vegetable in the quantity needed & cover in flavored vinegar. Chill for an hour or more & serve.
Strawberries balsamico: make this classic fruit dish from Northern Italy by adding 2-3 tbsp. of balsamic vinegar to a bowl of whole or sliced strawberries and allow to stand for 15 minutes. Add sugar to taste, mix well and serve.
